Veggie Goodness

We whipped up some veggie burgers from scratch.  They are made with chic peas, pink beans, broccoli, spinach, and carrot.  Eggs and breadcrumb hold them together.  I got the recipe from my friend’s mom when we were in high school and I think it’s been nearly that long since I’ve made them.  They are as good as I remember!

      2 cans chic peas, rinsed and mashed
      1 onion, chopped
      2 cloves garlic, chopped
      1 pkg frozen chopped broccoli
      1 pkg frozen chopped spinach, thawed
      1 carrot, shredded
      2 eggs
      1 cup bread crumbs
      grated cheese (optional)
      salt and pepper to taste

      Partially cook broccoli. Saute onion and garlic in a little oil. Mix everything together. Shape into patties. Fry in a little oil.

      Storage: After shaping patties, lay them in a single layer on a cookie sheet and freeze. When they are frozen, transfer to a suitable container and store in the freezer. They may be cooked frozen or partially thawed.

      When we made them this time, we kind of had to improvise. We only had one can of chic peas, so we substituted a can of pink beans. Also, we omitted the onion (heartburn), and our broccoli and spinach were fresh, so I steamed them a bit and chopped them in the food processor before mixing them with the rest of the stuff.
